Valentine’s Day is just ahead and you’ve been surrounded by pink and red candies in every store you’ve entered since December 26th. You can’t help yearning for the pretty heart-shaped boxes of chocolates. Why, oh why, don’t all stores carry vegan chocolate for this chocolate-covered holiday? No need to fear! Our super-easy 3-ingredient vegan chocolate is here to save the day and preparing it doesn’t take much longer than picking up a box in-store.

The Ingredients

Before diving into the recipe, let’s talk about the ingredients. Our 3-ingredient vegan chocolate requires:

  1. Coconut Oil: This oil solidifies at cooler temperatures, giving your chocolate a firm texture when set. It’s also rich in medium-chain triglycerides (MCTs), which can boost energy levels and metabolism.
  2. Cocoa Powder: Opt for unsweetened cocoa powder to control the sweetness. High-quality cocoa powder will result in a more decadent chocolate. Packed with antioxidants, it can help improve heart health and reduce inflammation
  3. Maple Syrup: This natural sweetener adds the perfect touch of sweetness while keeping the recipe vegan. It contains beneficial minerals like zinc and manganese, supportuing immune health and metabolic functions.

Customizing Your Vegan Chocolate

One of the best things about making your own vegan chocolate is the ability to customize it to your taste. While I haven’t tried them myself yet, here are a few ideas:

  • Add nuts or seeds: stir in chopped almonds, hazelnuts, or pumpkin seeds for added crunch.
  • Incorporate dried fruit: mix in dried cranberries, cherries, or apricots for a burst of sweetness.
  • Flavor with extracts: add a few drops of vanilla, mint, or orange extract to infuse your chocolates with extra flavor.
  • Sprinkle with sea salt: a light sprinkle of sea salt on top of your chocolates before tehy set completely can enhance the flavor and add a gourmet touch.

Store this 3-ingredient vegan chocolate in an airtight container in the refrigerator for up to two weeks. For longer storage, freeze for up to three months. Thaw in the refrigerator before serving.

Super easy with only three ingredients, this vegan chocolate is delicious enough to satisfy any craving!

Ingredients
  

  • 1/4 cup coconut oil melted
  • 2 1/2 tbsp maple syrup or sweetener of choice; at room temperature
  • 1/4 cup cocoa powder

Instructions
 

  • Combine all ingredients and mix until smooth.  Sifting the cocoa powder can help avoid lumps!
  • Carefully spoon into mould of choice (I typically use an ice cube tray!). 
  • Freeze for at least two hours, or until solid.  
  • Enjoy or gift them to someone special!
