Vegan Candied Sweet Potatoes

- 40 ounce sweet potatoes/yams canned
- 5 tbsp vegan butter Earth Balance or preferred brand
- 1/2-3/4 cup brown sugar to taste
- 1 cup vegan marshmallows eg Dandies
Combine canned potatoes, butter, and brown sugar in a large skillet.
Simmer over medium heat, stirring frequently.
Once thoroughly combined and heated, transfer to serving dish and top with marshmallows.
Let sit until marshmallows have melted. Cover to speed up melting.
Serve and enjoy!
